MYFOXNY.COM - One of the most popular spots to grab a bite to eat in NYC is the the cafe chain Just Salad where they serve, just salad. 

The most requested item is the buffalo chicken salad, according to chef Laura Pensiero and owner Nick Kenner.

BUFFALO CHICKEN SALAD

- Just Salad Buffalo Chicken Salad

- Makes 4 to 6 servings

- 6 cups each of Romaine and iceberg lettuce (rinsed, spun dry and torn or chopped)

- 14 ounces Buffalo chicken

- 3 celery stalks, sliced

- 1 ½ cups cubed or shredded Pepper Jack cheese

- 1 ½ cup tortilla strips

- ¾ to 1 cup Just Salad Buttermilk Ranch dressing

- Prepare salad, tossing together the lettuces, chicken, celery and cheese. Add the dressing and toss again. Gently fold in the tortilla strips and serve immediately. Alternately, top the salad with the tortilla strips.

Just Salad Buttermilk Ranch / Makes 2 ½ - 3 cups

1 shallot, chopped

1 teaspoon finely chopped fresh chives

1 handful (about 1/3 cup loosely packed) fresh Italian parsley, chopped

1 teaspoon finely chopped fresh thyme

2 tablespoons freshly squeezed lemon juice

1 1/2 tablespoons Dijon mustard

1 tablespoon olive oil

2 garlic cloves, chopped

1 1/2 teaspoons salt

1 teaspoon freshly ground black pepper

1 teaspoon paprika

1 cup low-fat buttermilk

1/2 cup reduced fat

1/2 cup Greek-style yogurt

Place the shallot, chives, parsley, thyme, lemon juice, mustard, olive oil, garlic, salt, and pepper in the bowl of a food processor. Process for 15 to 20 seconds to make a smooth mixture. Add the mayonnaise, yogurt, and buttermilk and blend until smooth. Adjust seasoning with salt if desired. Transfer the dressing to a container, cover, and refrigerate for 1 hour.
