Good Day Cafe: Lamb Shank over Fettuccine

Scaramella's Ristorante in Dobbs Ferry, N.Y., is here to show us some of their delicious signature dishes as they celebrate 20 years.

Lamb Shank over Fettuccine

1/2 cup oil

1/4 cup onions

1/2 cup celery

1/2 cup carrots

2 gloves of garlic

1 oz rosemary

1/2 oz bay leaves

A dash of salt

A dash of black pepper

1/2 cup red wine

1 can tomato juice

1 quarter of chicken stock

1/4 pound fettuccine pasta

Put the oil in a sauce pan and place the lamb in it.

Leave it in the pan until it is brown on the outside.

Set the lamb aside.

Using the same oil and lamb juices, add the vegetables and garlic and saute everything.

Add wine, tomato juice, chicken stock, salt, pepper, rosemary, and bay leaves.

Place the lamb back in the pan and put it in the oven for 2 to 2 and half hours.
