Spuntino Wine Bar & Italian Tapas serves up a tasty seared salmon at the Garden City eatery. General Manager Andrea Rossi and Chef Ryan Keough stepped into the Good Day Cafe to prepare the popular dish.

Check out the recipe:

1 fl oz. Olive Oil

4 oz. (W) Salmon

1/4 tsp Sea Salt

1/4 tsp Ground Black Pepper

1 oz. (W) Artichoke Hearts

1/2 oz (W) Fava Beans

1/2 oz. (W) Gaeta Olives (pitted)

1/2 oz. (W) Cherry Tomatoes

1 fl oz. Prep, Salmon Sauce Base

1 tbsp. Butter

1 tsp Prep, Parsley Oil

Preparation & Cooking Instructions:

1. Season the salmon with sea salt and ground black pepper.

2. Add 1/2 fl oz of olive oil to a hot pan. Add salmon and sear for 2 minutes.

3. Place the salmon under the salamander and cook for an additional 3 minutes

4. Add remaining olive oil to a hot small saute pan.

5. Add the atrichokes, favas, olives and tomatoes. Saute for 1 minute to warm through.

6. When the salmon is done, remove to a save a day and pour out any remaining oil from the pan.

7. Add the salmon sauce base to the hot salmon pan and bring to a boil.

8. Whisk in the butter and season with sea salt

9. Place the hot vegetables into a pasta bowl. Top with the salmon. Drizzle the sauce on top and around the plate.

10. Garnish with parlsey oil.
